Midnight Pasta

Ten past midnight in Naples, four hungry friends, and a cupboard holding nothing but spaghetti, garlic, oil and one dry chilli: that is a dinner.

Level A1 · Beginner

It is ten past midnight in Naples. The last bus is gone. Four friends are in a small kitchen. They are hungry.

Marco opens the cupboard: spaghetti, garlic, olive oil and one dry chilli. "That is a dinner," he says. In Naples this meal has a name: the midnight spaghetti.

Fill a big pot with water. Add salt. Boil it. It is loud, like rain. Put in the spaghetti. Cut two garlic cloves into thin slices.

Warm the garlic in oil in a pan. Do not fry it. When it is gold, take the pan off the heat. Brown garlic is bitter. Add the chilli.

Put the spaghetti in the pan with some pasta water. Mix. The oil becomes a sauce. Add parsley. Four bowls, no table. Everyone eats standing.
